Vitamin B-12 helps maintain the mylelin sheath that surrounds the nerves. It is needed for the production of red blood cells, and the metabolism of fatty acids, carbohydrates and proteins. B-12 is essential for growth in children and is thought to boost energy levels. B-12 is not found in vegetables, with the exception of brewer’s yeast. Natural sources of B-12 include eggs, milk, cheese, liver, and Vitamin B-12 is needed for normal nerve cell activity. Vitamin B-12 is also needed for DNA replication, and production of the mood-affecting substance called SAMe (S-adenosyl-L-methionine). This vitamin works with folic acid to control homocysteine levels. An excess of homocysteine, which is an amino acid (protein building block), may increase the risk of heart disease, stroke and perhaps osteoporosis and Alzheimer’s disease.
